Celebrity-endorsed Mumbai fine dining restaurant to serve traditional north Indian cuisine from Palm Jumeirah venue

DUKES Dubaiwill welcomethe award winning Indian restaurant and celebrity favourite, Khyber, to its outstanding collection of restaurants, with its doors set to open on Tuesday, 25th July.

The first venue to open under the Khyber name outside of its native Mumbai, the restaurant is situated on the 15th floor of the recently opened DUKES Dubai, where guests are transported to a five-star Indian hideaway boasting a 180-degree view that takes in Burj Al Arab and the Dubai Marina skyline. The venue, which has capacity for up to 162 guests, including 40 diners on the terrace, also boasts a live cooking station and numerous private dining options.
Owner,Sudheer Bahl,said: “Khyber is an iconic name, anybody who talks about Mumbai, knows about our restaurant andDUKES Dubai is the only venue that can recreate its splendour; the hotel is palatial, regal and looks magnificent.”
The Indian hotspot is a favourite of Sir Paul McCartney, Amir Khan, Richard Gere, Demi Moore and the Kuwait Royal Family, among others. Looking to channel the same success at the Dubai restaurant, the Indian fine dining favourite will specialise in authentic north Indian frontier food, best described as Ambrosia – the food of all the gods.

Fit for royalty, dishes on the extensive menu are based on fish, lamb, chicken and vegetarian recipes. Signature highlights include: Tandoori Raan, a tender leg of baby lamb, Khyber spiced marinade, cooked in a clay oven; Makai kiTikki, corn patties, royal cumin seed, green chillies and coriander; Five Grains Tandoori Roti, a wholewheat bread, ragi, oats, pearl millet (jawar)and red millet (bajra), cooked in the tandoor; and Hara Masala Pomfret, whole pomfret stuffed with mild coconut and coriander chutney, seared until crisp. The menu also features ninedifferent types of roti (bread).

Desserts include Rasmalai, sweet dumplings of cottage cheese served in sweetened flavoured milk, garnished with pistachio and almonds; Phirni, a traditional firm rice and milk pudding flavoured with aromatic spices; and seasonal Gajar Ka Halwa, a Punjabi dessert made of grated carrots, almonds, raisins slow cooked in sweetened milk and flavoured with mawa.
Aesthetically, the new Dubai restaurant will feature the same ethnic style as the flagship Khyber restaurant. Designed by leading architect Ayaz Basrai, founder of The Busride Design Studio, Khyber at DUKES Dubai has imported the DNA of the established restaurant in India, while giving it a contemporary twist.
